For the second day of healthy tea time snacks, I have a sandwich made with spring onions, potato and paneer. Well you might wonder why the potato is featured in these snacks and it hardly contributes to health factor. However I use it for one, it binds the other ingredients. The other being hubby dear is quite fond of it. Not in excess, still likes it.
The paneer is there for Konda. As you might have realized I make mostly with paneer, chocolate and whatever the kids like. They hardly ever eat the regular food properly. My colleagues attribute it to the fact that being a food blogger, I keep cooking them so many new and different dishes, that my kids almost always think it as a restaurant and wants only exotic dishes. Anyway the damage is already done.
Now for a quick post on this sandwich, which is very simple and I have grilled it to get the crispy effect. Pardon the pictures, we are off for a long weekend tour and with the September BM, I completely forgot to be prepared ahead. So the hasty pictures are sadly the result of this. Will update with better ones soon.
Spring Onions, Potato and Paneer Sandwich
Ingredients Needed
Sandwich Bread - 4 slices
Potato - 1/2 cup
Paneer, crumbled -1 cup
Spring Onions - 1 cup
Salt to taste
Red Chili powder - 1 tsp
Garam Masala - 1/2 tsp
Roasted Cumin powder - 1/2 tsp
Turmeric powder a pinch
Butter - 1 tsp for grilling
How to make the stuffing
Heat a non stick pan, saute the spring onions till they turn colour, then add grated boiled potato, crumbled paneer. Saute well. Next add all the spice powders, simmer for 5 mins and combine everything well.
Trim the bread slices, stuff the filling between two slices, butter the outer sides of the slices.
Heat a sandwich maker, once hot, grill these till done. Serve with sauce.
